Rice With Tuna And Egg

Published Saturday, 18 January, 2014 by Ellen

Cheap and easy

  • Brown rice
  • tuna, drained
  • curried egg:
  • boiled eggs mashed with a fork
  • curry powder
  • salt and pepper
  • lemon juice

To make curried egg mixture, boil some eggs, i like them to be hard hard boiled, so i boil them for 10 minutes. Place in a bowl and mash with a fork, add some curry powder, i use lots, and some salt and pepper and mix. Chuck in the fridge. Also great for sandwiches.

cook rice to packet instructions

place in bowl

add drained tuna and mix

add curried egg mixture

squeeze on lemon juice (if desired, may be an acquired taste)

add salt and pepper to taste

my curried egg mixture was made and sitting in the fridge to put in sandwiches. I tried adding it to some rice and tuna thinking it would ruin it, but i have to say, it was bloody bewdiful.

i just did this with what i had lying around. It's yummy and cheap and easy and filling when you don't have much in the fridge.

I tried this using a packet of bachelors vegetable rice and added the tuna and egg about a minute before the rice was cooked and thoroughly enjoyed it. Thanks for this one, i'll be doing it again soon :)
