Ingredients
- 2 tins of sweetcorn
- i red onion peeled and chopped
- 2 medium eggs
- 15g chopped parsley
- 125g plain flour
- 1 tsp baking powder
- salt and pepper to season
- vegetable oil for shallow frying
Instructions
~ preheat the oven to the lowest setting
~ place two thirds os the corn ina food processor with the onion, eggs,parsley, flour,baking powder and some salt and pepper.
~ whizz till well mixed put into a bowl and stir in the remaining corn.
~ heat a little oil into a frying pan over a medium high heat.
~ when hot drop in 2tbsps of the corn mixture per cake to form small patties cook for one minute on each side
~ put the cooked cakes on a baking tray covered with kitchen paper and keep warm in the oven while you continue.
