Step 1:

  • ~ preheat the oven to the lowest setting
  • Step 2:

  • ~ place two thirds os the corn ina food processor with the onion, eggs,parsley, flour,baking powder and some salt and pepper.
  • Step 3:

  • ~ whizz till well mixed put into a bowl and stir in the remaining corn.
  • Step 4:

  • ~ heat a little oil into a frying pan over a medium high heat.
  • Step 5:

  • ~ when hot drop in 2tbsps of the corn mixture per cake to form small patties cook for one minute on each side
  • Step 6:

  • ~ put the cooked cakes on a baking tray covered with kitchen paper and keep warm in the oven while you continue.
  • Step 7:

  • heat a little oil
