Step 1:

  • Start by cooking the cous cous according to the instructions – I recommend using slightly more water so it isn’t too dry.
  • Step 2:

  • Dice vegetables into small chunks – or slightly larger for more crunch. Mix into the cous cous after 5-10 minutes and serve!
  • Step 3:

  • If you have any other vegetables that you like, add them too! Or try adding a dash of tobasco sauce if you like a bit of spice.
  • Step 4:

  • This is great as a quick lunch, or part of a main meal.
