Creamy Pancetta Pasta

A quick, simple, cheap and tasty recipe ideal for students!

Ingredients
- Serves 2
- Pasta – Enough for 2 (Ideally Spaghetti, linguine, or fusilli.)
- 1 Leek
- 1 Onion
- 4 Cloves Garlic
- 1 tub of Pancetta (You could alternatively use bacon chopped up)
- Roughly 300ml single cream
- Olive Oil
- Grated Cheddar (the amount is your choice)
Instructions
1. Finely chop up the onion and garlic and leek.
2. Fry the chopped onion, garlic and leek on a low heat in olive oil until soft.
3. Add the pancetta and fry until cooked to your choice.
4.Add the cream, mix together, add the grated cheddar and stir well, cook on a very low heat for around 10 minutes.
(At this point, to enhance flavour you may wish to add a small amount of oregano or nutmeg and green pesto.)
5. Boil the pasta using the instructions on the packet.
6. Add the sauce to the pasta, mix well so it is evenly spread. (At this point you may grate some cheese on top of the pasta if you wish.)
7. Serve and enjoy!
(Note – If there is any left, it is nice if you put the rest of the pasta in a baking dish, grate cheddar on top and bake for around 10-15 minutes at around 150-200 degrees.)
