Step 1: 1. Finely chop up the onion and garlic and leek.
Step 2: 2. Fry the chopped onion, garlic and leek on a low heat in olive oil until soft.
Step 3: 3. Add the pancetta and fry until cooked to your choice.
Step 4: 4.Add the cream, mix together, add the grated cheddar and stir well, cook on a very low heat for around 10 minutes.
Step 5: (At this point, to enhance flavour you may wish to add a small amount of oregano or nutmeg and green pesto.)
Step 6: 5. Boil the pasta using the instructions on the packet.
Step 7: 6. Add the sauce to the pasta, mix well so it is evenly spread. (At this point you may grate some cheese on top of the pasta if you wish.)
Step 8: 7. Serve and enjoy!
Step 10: (Note – If there is any left, it is nice if you put the rest of the pasta in a baking dish, grate cheddar on top and bake for around 10-15 minutes at around 150-200 degrees.)
