Ingredients

  • 150g red lentils
  • 1 tablespoon of curry paste
  • 1 tablespoon of oil

Instructions

  1. Heat oil in a large pan and add the lentils. fry for 1-2 mintues, stirring continuously, then stir in the curry paste and 600ml of boiling water. Bring to the boil, then reduce heat to a gentle simmer. Cover the pan and cook for 15 minutes, stirring occasionally, until the lentils are tender and the mixture has thickened. Season to taste.
