Curried Cauliflower Soup
A hearty soup, perfect for lunch
Melt butter in a saucepan. Add cauliflower, pepper, onion and celery. Cook over a low heat for 10 minutes, without browning.
Mix in curry powder and stock. Stir in cornflour mixture. Simmer for 10 minutes or until soup thickens and vegetables are tender.
