Curried Cauliflower Soup A hearty soup, perfect for lunch By Guest Contributor February 1, 2012 Soup Preparation Time Cook Time Servings6Ingredients30g butter½ cauliflower, cut into florets1 red pepper, diced1 onion, chopped2 stick of celery, chopped2 tsp curry powder750ml chicken stock2 tbsp cornflour with 500ml milkInstructions Step 1: Melt butter in a saucepan. Add cauliflower, pepper, onion and celery. Cook over a low heat for 10 minutes, without browning. Step 2: Mix in curry powder and stock. Stir in cornflour mixture. Simmer for 10 minutes or until soup thickens and vegetables are tender. Step 3: (Approximately 133 calories per serving)
