Ingredients

  • 1 White cabbage thinly sliced
  • 1 onion thinly sliced
  • 2 medium carrots grated
  • 3 tbsp mayo
  • 3 tbsp yoghurt
  • tbsp fresh chives
  • 1tbsp curry powder
  • 1tsp crushed corriander seeds
  • 2 garlic cloves crushed
  • salt and pepper to taste

Instructions

  1. Mix all the ingrediants together and allow to marinade for a couple of hours before serving.

  2. Just add the mayo and yoghurt to how thick/ thin you like your coleslaw, if you use a green cabbage it will discolour more quickly. If you find that the next day it has gone a runny consistency then pour out the ‘??juice’ and replace with more yoghurt or mayo. It will stay fresh in the fridge for around 4 days.
