Curried Lentils

Cheap and Easy curried lentils (serves 4 for 2 quid)

Ingredients
- 1 Bag of Green/Red lentils
- 1 Large onion
- 1 Tub of curry powder
- A drop of cooking oil
- (stock is optional)
- Mashed potatoes go well with curried lentils
Instructions
1.Wash lentils under cold running water
2.Boil lentils in salted water (follow instructions on packet, although a shorter boiling time can be used)
3. Drain lentils and rinse again
4.Finely Chop onion
5. Soften and slightly brown the onion in a pan with a splash of oil
6. Add desired ammount of curry powder (dependent on strength) and fry with the onions for a few minutes
7. Add the lentils and about 1 pint of warm water (or stock if preferred) and season accordingly – although maybe less salt
8. Simmer for about 30 mins so liquid reduces
9. Enjoy on their own or with a Dolloped of fresh mash
