Step 1:

  • 1.Wash lentils under cold running water

  • 2.Boil lentils in salted water (follow instructions on packet, although a shorter boiling time can be used)

  • 3. Drain lentils and rinse again

  • 4.Finely Chop onion

  • 5. Soften and slightly brown the onion in a pan with a splash of oil

  • 6. Add desired ammount of curry powder (dependent on strength) and fry with the onions for a few minutes

  • 7. Add the lentils and about 1 pint of warm water (or stock if preferred) and season accordingly – although maybe less salt

  • 8. Simmer for about 30 mins so liquid reduces

  • 9. Enjoy on their own or with a Dolloped of fresh mash
