Ingredients
- ? 2 mccain ready baked jackets
- ? 150g cooked chicken, cut into bite size pieces
- ? 3 tbsp light mayonnaise
- ? 3 tbsp low fat yogurt
- ? 2 tbsp madras curry paste
- ? 100g fresh mango, peeled and diced
- ? salt & pepper to season
Instructions
? cook two mccain ready baked jackets in the microwave as per instructions on pack
? mix together the mayonnaise, yogurt and curry paste and season well with salt and pepper
? next add the mango and chicken and mix well
? when the potatoes are cooked, open slightly, top with the chicken mix and serve
