Curried Mccain Chicken Mccain Jackets

Tasty winter warming jacket potatoes

Ingredients

• ? 2 mccain ready baked jackets
• ? 150g cooked chicken, cut into bite size pieces
• ? 3 tbsp light mayonnaise
• ? 3 tbsp low fat yogurt
• ? 2 tbsp madras curry paste
• ? 100g fresh mango, peeled and diced
• ? salt & pepper to season

Instructions

STEP 1:

? cook two mccain ready baked jackets in the microwave as per instructions on pack

STEP 2:

? mix together the mayonnaise, yogurt and curry paste and season well with salt and pepper

STEP 3:

? next add the mango and chicken and mix well

STEP 4:

? when the potatoes are cooked, open slightly, top with the chicken mix and serve
