Curried Mccain Chicken Mccain Jackets

? 2 mccain ready baked jackets

? 150g cooked chicken, cut into bite size pieces

? 3 tbsp light mayonnaise

? 3 tbsp low fat yogurt

? 2 tbsp madras curry paste

? 100g fresh mango, peeled and diced

? salt & pepper to season

Step 1:

? cook two mccain ready baked jackets in the microwave as per instructions on pack

Step 2:

? mix together the mayonnaise, yogurt and curry paste and season well with salt and pepper

Step 3:

? next add the mango and chicken and mix well

Step 4:

? when the potatoes are cooked, open slightly, top with the chicken mix and serve
