1. Chop the chicken in so bite size chunks and fry in some olive oil until cooked through, set aside to cool. Step 4:
2.To make your croutons slice the bread in to cubes and gently fry it in a frying pan as the bread absorbs the oil until they are golden brown and crunchy, set aside to cool. Step 5:
3. Wash and slice the cos lettuce in strips and place in a bowl, stir in the chicken and the grated cheese, pour some of the Caesar salad dressing until well coated, add the croutons and stir one final time, sprinkle a bit more grated cheese on top and serve. Step 7:
Note: If you want to add more flavour to the chicken and have more time on your hands try adding 2 chicken stock cubes to some water in a saucepan and gently poaching the chicken, this makes it more tender and moist.
