  • Peel potatoes and cut into wedge shaped chunks.

  • boil for 8-10 minutes in heavily salted water.

  • pre-heat the oven to 200c

  • drain and place in a mixing bowl. Liberally add all the seasoning, and lots of hot sauce if you’re using it. Mix like crazy till the wedges are coated.

  • spray a baking tray with oil, spread the wedges onto it, and spray again with oil.

  • cook for 30 mins.

  • serve with loads of cheese piled on top.

  • loads of mayonaise
