Light, Airy Microwave Cake

Just like a quick Victoria Sponge!!!



  • 6 tablespoons of plain flour
  • 3 tablespoons of milk
  • 3 tablespoons of oil (olive oil, almond oil, sunflower oil - any will work)
  • 1 egg
  • 3 tablespoons of sugar


In a microwaveable bowl, whisk the flour and milk.

Add the sugar, oil and egg.

Whisk thoroughly for about 5 minutes, until there are plenty of bubbles in the mix.

Place in the microwave.

Leave in for 3 minutes.

When you remove, the mix should have risen considerably, and should be a pale, creamy beige.

Sprinkle some sugar over the top.

    I attempted to make this and the batter looked odd, so i was a bit weary and then it almost exploded in my microwave and after all that, it tasted like doughy pancake!

    think that should be self-raising flour so it can rise. how long should it be cooked for and should it be cooked on medium?n
