Perfect Pavlova!

A deliciously light, fruity dessert that will serve 4-6 people.

Ingredients

  • 3 egg whites
  • 6oz caster sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon vinegar (honest!)
  • 1 teaspoon cornflour
  • 1/2 pint double cream
  • fruit to finish

Method

1. Preheat the oven to 150 degrees celsius. Line a baking sheet with non-stick paper.

2. Beat the egg whites until soft peaks begin to form.

3. Beat in the sugar a little at a time.

4. Add the other ingredients and stir.

5. Spoon onto the baking sheet to create one round meringue (roughly 7 inches diameter).

6. Bake in the oven for 1 hour then leave to cool.

7. Whip the cream until soft peaks begin to form the dollop this all over the meringue.

8. Finally, top with the fruit of your choice and enjoy!

    Hi everyone, double cream is the british equivalent to heavy cream, i think - you can whip it up so it is fairly stiff. Half a pint is about 285ml so between one and one & a quarter cups of heavy cream. You can use ready whipped cream but i prefer the flavour/richness of double cream! :)

    Where can i find pint double cream? Can i just use other creams like whip cream ?

    It was really nice to eat but when i used greaseproof paper it stuck and it took ages to get off. Plus when i finally did get it off the paper it was broken and didn't look that appealing.
