Rich Chocolate Mousse

  • 175g / 6 oz plain chocolate ,coarsley chopped or grated
  • 3tbs water
  • 15g / half an oz unsalted butter
  • 3 yolks from medium eggs
  • 225ml / 8fl oz double cream
  • 1 tbs of vanilla caster sugar
  • 50g / 2 oz chocolate flakes ,to decorate


1.Put chocolater and water in a bowl.

Microwave on defrost for 1-2 mis until mixture melts.Remove bowl and add butter.

Stir until melted and cool for 5 mins. Stir in egg yolks one at a time.

leave to cool for 15 mins.

2. Meanwhile whip the crwam and sugar together until soft peaks form.Reserve one third and fold the remainig whipped cream into chocolate mixture.

3.Devide into individual serving bowl.Chill until set.Decorate with reserved cream and chocolate flakes.

P.S > For mousse with a hint of mocha, melt the chocolate with strong black coffee instead of water .
