Spiced Pumpkin Loaf

Don't waste the insides of your pumpkins this year - use them!



  • 140g self raising flour
  • 220g brown sugar
  • 95ml oil (whatever type you have - but olive oil works well)
  • 150 grated pumpkin
  • 50g sultanas
  • 2 tsp. Cinnamon
  • 2 tsp. Ground ginger
  • 2 eggs, beaten
  • add some chopped nuts if you like, or for abit of luxury add some chopped


1) pre-heat the oven to 180c and line a cake (20x20cm) tin

2) simply mix the oil and sugar together in a mixing bowl, then add the eggs, spices, pumpkin, sultanas and finally the flour and mix.

3) ensure all the ingredients are well incorporated then pour into the cake tin and bake for 30 minutes.

4) once baked, leave to cool and enjoy.
