Published Friday, 22 May, 2009 by Victoria Cooke

Ice Tea

  • 1oz (25g) of tea leaves
  • 1 pint (570ml) water
  • Add the tea leaves to the water, and allow to steep over night. Strain the next day, to remove the tea leaves.
  • 1 pint (570ml) sparkling water
  • 1 pint (570ml) cold tea solution
  • 1 tablespoon of caster sugar
  • 1 punnet of fresh raspberries
  • 1 sprig of mint

Mix the sparkling water and tea together.

Sweeten with the sugar to your own taste.

Fill 4 glasses with lots of ice and the raspberries.

Pour over the tea and decorate with a sprig of fresh mint.

If you don't have loose tea, or want to try some different tea, there are many to choose from - what about Green Tea, Black Tea, White Tea for example?
