Ingredients

  • 1/2 bag of potatoes
  • 3 medium / 2 large carrots
  • 2 sticks of celery
  • Bacon (2 rashers per person)
  • Sausages (2 or 3 per person)
  • Thyme
  • Parsley
  • 3 – 4 Vegetable stock cubes
  • Dumplings – optional – but very nice (1 or 2 per person

Instructions

  1. Serves 4-6

  2. Peel (if necessary) and chop potatoes, carrots, celery, bacon, thyme, parsley, and place in a large saucepan with sausages and dumplings.

  3. Cover ingredients with hot water.

  4. Dissolve and add the stock cubes.

  5. Bring to the boil and then simmer until everything is cooked (usually an hour).
