It’s officially soup season. The weather has finally gotten colder outside, so you can start adding soup to your grocery shopping list each week. And thankfully, there are so many shortcuts when making soup, and one of the easiest ones is just by grabbing store-bought broth or starter kits. 6. French Onion Soup

French Onion Soup offers the ultimate comfort meal during the colder season. And all you need to start it is beef brough and onions, hence the name. Start by carmaelzing your onions in some butter, then add some flour, which will help it thicken up later. After, deglaze the bottom with beef broth and even white wine, then bring to a simmer.

Add in your seasonings and let the soup thicken while you prepare your dishes for the oven. You’ll want to add the soup to small caraffes or pots, and then top with gruyere, or even swiss cheese, and then a slice of baguette. Plop that in the oven until crisp and serve.

Can’t decide between a pasta or a soup? Then try Tortellini soup, the best of both worlds. All you need is chicken broth and a can of crushed tomatoes to start with. When you combine both into a pot and let it boil, you can then add your seasonings. After that, you’ll just want to add your tortillini pasta noodles and let cook. The starch from the pasta will thicken up your soup here.

After the noodles are cooked, remove from heat and then add your spinach so it’s just barely wilted. Serve into a bowl and don’t forget to top with parmesan cheese with a side of bread.

For tortilla soup, start by cooking your chicken and shredding it. From there, add your vegetables until sauteed, and then add your chicken stock, black beans, kidney beans, corn, and tomato paste. Let everything come together for about 15 minutes.

To thicken up your soup, you either add heavy cream or make a slurry with warm milk and corn starch. When you’ve thickened your soup, serve with toppings like avocado, tortilla chips, cilantro, or even sour cream.

This creamy, protein-rich dish is one of the easiest soups to make this season. For mushroom soup, all you need is to saute mushrooms with oil for about 10 minutes until soft, then add chicken broth to deglaze the pan. Reduce the heat and let the flavors blend.

When the flavors come together, add a slurry of milk and cornstarch to thicken up the soup, and then blend half the soup in either a blender or with an immersion blender. Serve with a side of bread.

One of the best recipes just sees you cooking and shredding your chicken, then sauteeing diced celery, carrots, and onions, then deglazing with chicken broth. Once combined, add your egg noodles to the soup.

The starch of the noodles will help it thicken, and the egg noodles only take about five or ten minutes to cook. If you want a creamier version, add a splash of heavy cream. Then serve with a side of bread.

From there, use a blender or an immersion blender to smooth out the base. Add some heavy cream to make it even smoother and creamier, and serve with a delicious grilled cheese.
