Easy Beany Nachos

Ingredients

  • 1 bag Original doritos/plain torillas
  • 1 tin chopped tomatoes
  • 1 tin kidney beans
  • handful of cheese
  • some cream cheese
  • *optional* BBQ sauce, Brown sauce, reggae reggae, pretty much any similar sauce.

Instructions

  1. -Pre-heat oven to about 170 for fan, 180 for normal.

  2. – Put the chopped tomatoes in a pan with the kidney beans (and a splash of your sauce). A bit of ketchup or tomato puree will add a kick here so if you have some, add a litttttle bit. Bring the pan to a bubble.

  3. -While pan is heating, spread about 2/3 or 3/4 of the doritos in a roasting tin/oven tray. Anything ovenproof with a 3-inch or so lip. You want about 2 layers of doritos, not completely spread out. Also, grate some cheese.

  4. -Once pan is bubbling, take off heat and pour the contents onto the doritos. Add the cheese and a few dollops of cream cheese. Stick the whole thing in the oven.

  5. -After a few minutes the cheese will have melted, the cream cheese will develop this awesome texture and any dorito tips sticking out will have got a lil burnt. Serve up! add the remaining doritos for some extra crisp. I find eating this with a spoon in deep bowls is easiest.
