These easy ground beef stuffed peppers are a weeknight staple. They are so simple and made with basic ingredients. They are perfect to make during the school year when I am so busy and running around because they don’t take a long time and they can also be meal prepped. If you only have a little bit of time earlier in your day you can make these easy ground beef stuffed peppers and instead of baking them, they can be placed into the refrigerator for a few hours. Then bake as normal when ready to eat.

I make these all of the time when I am at school for my roommates and myself because of how easy and nutritious they are. There is great protein in the ground beef, carbs in the rice, and healthy fats in the mozzarella. This dish is very well-balanced and always leaves me feeling great after eating.

In this recipe, I recommend baking in an 8×8 baking dish as this keeps the peppers close and upright. If you don’t have one I recommend getting this Pyrex 8×8 Deep Dish Baker. This dish is perfect for this recipe, but also multi-functional. Use it for roasting vegetables, making brownies, or any baked good you’d use a dish for.

These easy ground beef stuffed peppers also have some room to play with flavors. Add some cayenne to the ground beef for a slightly spicier stuffed pepper. You could even omit the peppers completely and try these with tomatoes if peppers aren’t your thing. You could even take these easy ground beef stuffed peppers and make them easy ground turkey stuffed peppers. The ground beef really drives home that burger flavor, but the turkey is a slightly healthier alternative.

At school I love to serve these peppers with a side salad for a little extra vegetable on my plate and student recipes has two great ones. This guide for How to Make No Anchovy Caesar Dressing takes you through step by step and creates the most perfect salad dressing. This dressing is light and lemony and sure to be the perfect side with these easy ground beef stuffed peppers.

Another great salad we have is this We Tried the La Scala and You Should Too. The La Scala salad has hype for a reason and is the perfect meal or side salad. This salad would go great alongside these easy ground beef stuffed peppers, although I think most things would! I can’t emphasize enough how easy these peppers are to throw together. They are so simple and look like you’ve spent hours in the kitchen preparing a beautiful meal. Try these easy ground beef stuffed peppers next time you have company coming over.
