When it comes to German street food, currywurst is one of the best. It’s big on flavor and pairs brilliantly with crunchy fries. This combination can be made at home very easily. All you need are bratwursts and some specific flavors to make the sauce, and it’s the sauce you’ll keep coming back to, as it’s ketchup with a lot more oomph. And we’re not just talking heat, but tang, spice, and sweetness.

The best thing about this recipe is that it’s super simple. All you need to do is cook the sausage and some veggies, then mix the other ingredients into the sauce. At the same time, you can throw some frozen fries into an air fryer, and in less than 30 minutes, you’re eating street food at home. Currywurst also works great with bread. Check out the ingredients and cooking steps below.

Currywurst Recipe Ingredients

  • 4 bratwurst or bockwurst sausages
  • 1 tablespoon of vegetable oil
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 1 tablespoon of brown sugar
  • 1 tablespoon of tomato paste
  • 1 cup of ketchup
  • 1 teaspoon of apple cider vinegar
  • 1 teaspoon of Worcestershire sauce
  • 2 teaspoons of mild curry powder, plus more for topping
  • 1/2 teaspoon of smoked paprika
  • 1/8 teaspoon of cayenne pepper, optional
  • 2 to 4 tablespoons of water, as needed
  • Salt and black pepper, to taste

Currywurst Recipe Instructions

  1. Heat the oil in a skillet over a medium heat and add the bratwurst. Cook until browned on all sides and heated through. This usually takes 10 minutes.
  2. Remove the bratwurst from the pan and slice into bite-size pieces.
  3. In the pan, add the diced onion and cook for 4 minutes, until softened.
  4. Add the garlic and cook for 30 seconds.
  5. Stir in the brown sugar and tomato paste. Cook this mix for 1 minute to deepen the flavor.
  6. Add the ketchup, apple cider vinegar, Worcestershire sauce, curry powder, smoked paprika, and cayenne pepper. Stir the mixture well.
  7. Simmer the sauce for 5 minutes. Add water, 1 tablespoon at a time, until the sauce is thick but pourable.
  8. Taste and season with salt and black pepper.
  9. Place the sliced sausage on a plate or in a shallow bowl. Spoon the warm sauce over the top and sprinkle with extra curry powder before serving.
