Easy Jambalaya

Ingredients
- This is perfect for using up any left over cooked plain rice and apart from the chorizo and prawns all the ingredients you are more than likely to have in the cupboard so its fairly cheap. You could always use normal sausages if you prefer, but chorizo works best
- 100g long grain rice
- 1 onion, chopped
- 2 clove garlic, finely sliced
- Handful of chorizo per person, chopped
- 4 slices ham or bacon, chopped
- ½ teaspoon cayenne pepper
- ½ teaspoon paprika
- 300ml beef stock, plus extra to cook the rice
- Handful of prawns or seafood sticks per person
- Couple of chopped tomatoes fresh or from a can
- 1 red pepper, chopped chunky
Instructions
1. Get the rice cooking if youre not using leftover
2. Whilst the rice is cooking, fry the onion and garlic on a medium heat until they start to soften (about 5 minutes). Then add the ham and chorizo, cook for a couple of minutes.
3. Throw in all the spices, pepper and stock. Bring to the boil and leave for 10 minutes.
4. Drain the rice and add into the stock mixture along with the tomatoes and prawns. Cook for another 5 minutes. If the stock has boiled away add a little more in. You want some liquid in there but not so much that its like a soup.
This makes enough for 2 portions and you can freeze it as long as none of the ingredients have been previously frozen. Make sure you heat it up properly as rice can give you food poisoning really easy if its not heated through…and if you are freezing it, cool it down as quick as possible.
