Ingredients

  • 2 veg stock cubes
  • Half an onion
  • 1 carrot
  • 1 potato
  • 1 leek
  • parsley
  • 2 cloves of garlic

Instructions

  1. Chop up all the veg.

  2. Boil a litre of water in the kettle.

  3. Pour into pot and add stock cubes.

  4. Fling in all the ingredients and leave to simmer for half an hour.

  5. Have some for lunch and freeze for when you’re feeling run down!
