STEP 1:

chickpea
peas

Rinse a can of chickpeas under water and drain to dry for a few minutes

STEP 2:

butter
chickpea
cinnamon
milk
peas
vanilla

Pour the chickpeas, nut butter, vanilla, milk, cinnamon, and salt into a blender or food processor

STEP 3:

cookie dough

Blend cookie dough mixture together for about 2-4 minutes until well combined and smooth

STEP 4:

chocolate chips
flour

Pour into a large bowl or storage container and mix in chocolate chips and flour until the texture is like Play-Doh

STEP 5:

Serve chilled

Why Vegan Edible Cookie Dough Is Ideal

One of my all time favorite treats growing up was chocolate chip cookie dough. Whether my mom and I would make it from scratch or buy the pre-made dough from Toll House, it was too tempting to eat before the cookies were done baking in the oven. It was such an exciting snack to eat while hanging out in the kitchen getting ready to enjoy our baked goods.

Even though raw cookie dough comes with so many great memories, there are several reasons why eating raw cookie dough is not ideal. Although delicious, chocolate chip cookies use eggs to bind the batter and eating raw eggs can be dangerous for risk of food borne illness. Homemade and store bought cookie doughs caution consumers from eating the dough before you bake it thoroughly.

Another reason why this isn’t a snack we’d recommend is because it is an unsatisfying treat. Not because it doesn’t taste good, but because it doesn’t satisfy your palette in the same crunchy, warm way a finished cookie does. As a result, you can end up eating more cookie dough than you would cookies.

Cookie dough is mostly full of empty carbs like sugar and flour, so it doesn’t leave you full or satiated in appetite. Instead of using these typical ingredients, we substituted regular flour and sugar to make it healthy, filling, and customizable to several diets such as vegan, gluten-free, and keto.

How We Made Our Edible Cookie Dough

The answer to this dilemma is to make our easy edible cookie dough recipe. There are no eggs or fake sugars, making it safe to eat and incredibly healthy. Plus, there is a secret ingredient that packs in the protein and fiber: chickpeas. By using chickpeas as a base and mixing them with milk and nut butter, it creates a thicker and sweeter hummus. Then, when you add on a couple of other key ingredients, it very closely resembles cookie dough we all know and love.

Our easy vegan edible cookie dough blends together a dough that is low in gluten and flour and high in protein. We wanted to make sure to get the consistency exactly right. The trick was adding coconut flour at the end along with mini chocolate chips to keep the dough soft and well-combined. However, coconut flour is healthy for you and friendly to anyone with a gluten sensitivity.

I originally got inspired to recreate this recipe because my college campus sold P.S. Snacks chickpea protein cookie dough. As a result, they were the inspiration for this recipe. Both recipes are completely vegan, dairy, and gluten-free, making it an accessible healthy treat for everyone. This is so important as there are several food allergies and sensitivities to be aware of when cooking for friends and family.
