Easy Vegetable Soup

Ingredients

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • *any vegetables that you have on hand – i chose to use the following:
  • 2 potatoes, diced
  • 2 carrots, diced
  • 1 cup of green beans, cut into smaller pieces
  • 2 cups of spinach*
  • 1 can of diced tomatoes
  • 2 tablespoons of tomato passata
  • 4 cups of chicken stock
  • salt and pepper
  • sour cream (optional)

Instructions

  1. 1. In a big saucepan on low to medium heat, add oil and saute the onion for a couple of minutes

  2. 2. Add garlic, saute for a further minute

  3. 3. Put heat up to medium and add all the vegetables to the saucepan, saute for five minutes

  4. 4. Add diced tomatoes and passata, stir through for a minute

  5. 5. Add chicken stock and bring it to the boil

  6. 6. Turn down the heat and let it simmer on low to medium heat for 25-30 minutes – add salt and pepper to taste

  7. 7. Serve with crusty bread and a dollop of sour cream (optional)
