Egg-fried Rice Risotto

Quick, easy, meal for one, for busy people.
Difficulty Level: easy
Ingredients
- Half a bag of rice.
- 2 eggs.
- 1 chicken breast cut into strips, (you don’t have to have chicken if you’re a vegetarian, you can just have veggies, still tastes nice both ways!)
- small tin of sweetcorn, or peas – whatever you prefer.(you don’t even have to have them but i reckon it tastes better with veggies:)
Instructions
1)boil the rice in a pan for about 10 minutes or until done. If using microwavable rice, e.G uncle ben’s then put in the microwave for 2 minutes.
2)crack 2 eggs and mix together.
3)put rice in a frying pan with oil or butter once cooked and add eggs, wait til eggs are cooked onto the rice.
(skip steps 2&3 if using ready made egg fried rice)
4)slice chicken breast into strips or if using ready-sliced chicken, then cook them in a frying pan with butter or oil for 10 minutes until golden brown or crispy.
5)take the egg-fried rice and put into a bowl and mix sweetcorn together and once chicken is cooked, add the chicken.
6)add salt or pepper if desired.
there you go, quick and easy! (will be quicker if using ready made stuff)
