  • Add Vegetables and Cream Cheese to a medium-sized bowl. Beat on medium with a hand mixer. Spread on tortilla shells, adding cheddar cheese on top. Roll tortillas and wrap with plastic wrap. Leave in fridge to set for 1 hour. Bake in the oven on 425 for 8-15 minutes. Let cool for 5 minutes, then chop into appetizer-sized pieces. Makes about 42 pieces.
