Smother the salmon steak in the pesto and season with salt and pepper and drizzle a little olive oil over it if necessary
Wrap in tin foil and bake in the oven for 20 minutes at a high heat
Meanwhile roast the pine nuts in a frying pan until they are slightly browned but do not overcook or you will lose all the wonderful oils they contain!!!
Put the pine nuts to the side
Cook the pasta and mix in the salmon which should fall apart nicely into flakes if cooked properly, the creme fraiche, a dash of extra pesto if needed and the pine nuts! VOILA- a simple but delicious dish. :)
*** if red pesto is used, add some chopped sundried tomatoes for a nice kick
