Fried chicken

Ingredients

  • 500g chicken (whichever cut you like, I prefer legs and thighs as they are cheaper than breast but it works with any. If using breast then cut into smallish chunks to ensure they cook all the way through)
  • 1 cup plain flour
  • 1 1/2 tsp Chilli powder
  • 1/2 tsp ground pepper
  • Enough oil to fry the chicken in, ideally needs to be enough that the chicken sits in about 1/2 a centimetre of oil. It’s also nice to use butter or a mixture of oil and butter.

Instructions

  1. 1) Mix flour, ground pepper and chilli powder.

  2. 2) Coat chicken entirely with flour mixture.

  3. 3) Heat oil until very hot, but not smoking, fry chicken pieces for 5 minutes turning regularly to ensure they don’t burn.

  4. 4) When cooked, remove from pan and place on kitchen paper to get rid of any excess oil.

  5. Serve with sweetcorn and mashed potato for a proper creole dinnner!
