Step 1: Slice the eggplant, season as you like (i would recommend salt and coriander).
Step 3: crack the egg in a plate and stir. Put some flour in another plate.
Step 5: heat the frying oil, roll the slices in the egg and in the flour, and fry.
Step 7: tip: you can add some sprinkled cheese onto the slices, or eat with a dip (garlic sauce, mayonnaise…)
