Fruity Coconut Creams

Ingredients
- 1 x 50g sachet coconut cream
- 500g pot 0% Greek yoghurt or Quark
- 85g / 3oz icing sugar ,sieved
- a few drops of vanilla extracts
- 2 kiwi fruits
- 400g canned pineapple chunks
Instructions
1. Dissolve the coconut cream in 50ml of boiling water ,then leave to cool.
Spoon the yoghurt or Quark into a mixing bowl, then stir in the icing sugar and vanilla extract.Combine with the coconut mix then spoon into four individual glasses. Chill until ready to serve.
2. Peel and chop the kiwi fruit into small pieces. Drain the pineapple, then chop the chinks into small pieces. Mix together the fruit , then spoon over the top of the coconut cream to serve.
