Step 1:

  • Before anything pre heat your oven to 200 degrees!!

  • Put you spud in the microwave for 5 mins after that turn it over and cook for a further 5 mins.
  • Step 4:

  • Then pop it in the oven to cook fully and crisp the skin! (usually takes about 35-40 mins)

  • While that’s in the oven.. Finally Dice an onion then fry it off in a little oil to soften (do not let it go crispy)
  • Step 7:

  • once done pop the soften onion into a bowl.

  • Great some cheese and also leave to one side.

  • Once the potato in extra crispy take it out of the oven (but leave oven on)

  • WARNING this part is hot so take caution!!

  • cut your potato right down the middle and scoop out the flesh into the bowl u added ur onions to.
  • Step 14:

  • Add butter and salt and mix altogether till its all fluffy and lovely.
  • Step 15:

  • take a tiny bit of mint sauce and add it to some mayo mix together and also add that to you potato mixture.
  • Step 16:

  • after all this is mixed add the mixture back into the potaote skins and top with the cheese u grated earlier.
  • Step 17:

  • pop back into oven in till the cheese is melted and starting to turn golden
  • Step 18:

  • take out of oven and enjoy!! 🙂
