Garlic Bbq Chicken And Yellow Rice

Quick, easy, cheap and filling using the rice cooker and microwave

Ingredients

  • *cooked bbq chicken from store (cold)
  • *crushed garlic in a jar
  • *1 cup of any rice to your liking
  • *1 teaspoon of turmeric powder
  • *salt to taste
  • *dash of oil
  • *optional: jar of fire roasted peppers (capsicums)

Instructions

  1. 1. Wash the rice until the water runs clear and put into rice cooker with 2 cups of water, the turmeric powder and some salt to taste. I also add a dash of oil too. Mix together so the turmeric powder has dissolved in the water. Turn rice cooker on to cook.

  2. 2. Get the bbq chicken and start to just tear the meat off in rough strips. No need to be perfect, just kind of the same sizes. Put them into a microwave safe bowl. Depending on taste and how much chicken you pulled off is how much crushed garlic you use. For example i had a handful of chicken and used a teaspoon of garlic (but i love garlic). Mix the garlic with the chicken and put into fridge until the rice has cooked.

  3. 3. When the rice has cooked it should be a beautiful yellow colour. Warm the garlic chicken up in the microwave for a couple of minutes (depending how good your microwave is).

  4. 4. Serve some rice and the garlic chicken on a plate and if you’d like add some fire roasted peppers for extra flavor, but without them is just as good too. Enjoy 🙂
