Golden Syrup Tray Bake!

Deliciously light yet oh so simple tray bake! fluffy, quick and tastes divine.

Ingredients
- Cake-
- ? 100g muscovado sugar – use a light brown sugar if you don’t have any
- ? 200g butter
- ? 200g self raising flour
- ? 2 eggs
- ? 2 heaped tbsp golden syrup
- buttercream topping-
- ? 60g butter
- ? 120g icing sugar
Instructions
? combine together the sugar with softened butter, until creamy
? add the eggs mixing thoroughly
? stir in the golden syrup
? sift in the flour and bring everything together, either with good hand mixing or an electric whisk
? pour the mixture into a well greased tray – a roasting dish will double up if nothing else suitable!
? put into a preheated 180c oven for about 25 minutes, or until golden, risen and a skewer inserted in the centre comes out clean.
? turn out and allow to cool
? i like to top mine with a buttercream, and then you can add any decoration too!
? use an electric whisk to combine the 60g butter with 120g icing sugar until a creamy paste
? once the cake is cool, spread the icing on, cut into squares, and decorate how you please!
