  • ? combine together the sugar with softened butter, until creamy

  • ? sift in the flour and bring everything together, either with good hand mixing or an electric whisk

  • ? pour the mixture into a well greased tray – a roasting dish will double up if nothing else suitable!

  • ? put into a preheated 180c oven for about 25 minutes, or until golden, risen and a skewer inserted in the centre comes out clean.

  • ? i like to top mine with a buttercream, and then you can add any decoration too!

  • ? use an electric whisk to combine the 60g butter with 120g icing sugar until a creamy paste

  • ? once the cake is cool, spread the icing on, cut into squares, and decorate how you please!
