Grilled Vege Cous Cous Mmmmmmm :) By Guest Contributor June 25, 2011 Vegetarian Preparation Time Cook Time Servings0Ingredients1 CourgetteMixed PeppersRed onion2 tbsp olive oil Packet of Cous cous8 dried and ready to eat apricots1 tbsp fresh corriander 1/2 limeInstructions Step 1: 1) slice the courgette into thin strips. Quarter, core and deseed the peppers. Step 2: Skin and cut the onion into wedges and brush them with a little of the oil. Cook all the vegetables on a gridle pan on the hob until softened. Step 3: Step 4: 2) prepare the cous cous according to the pack directions. Quarter the apricots and finely chop the coriander. Step 5: Step 6: 3) Stir the vegetables, apricots, corriander and the remaining olive oil into the cous cous. Add a good old squeeze of lime juice. Step 7: Step 8: Yummyyumyum <3
