Step 1:

  • 1) slice the courgette into thin strips. Quarter, core and deseed the peppers.
  • Step 2:

  • Skin and cut the onion into wedges and brush them with a little of the oil. Cook all the vegetables on a gridle pan on the hob until softened.

  • 2) prepare the cous cous according to the pack directions. Quarter the apricots and finely chop the coriander.

  • 3) Stir the vegetables, apricots, corriander and the remaining olive oil into the cous cous. Add a good old squeeze of lime juice.
