Hartley’s Squeezy Jam Tarts

Ingredients

  • 175 g/6 oz/1.5 cups plain (all-purpose) flour
  • A pinch of salt
  • 75 g/3 oz hard block butter, diced
  • Cold water, to mix
  • 90 ml/6 tbsp Hartley’s Smooth Squeezy Jam

Instructions

  1. Sift the flour and salt in a bowl.

  2. Add the butter and rub in with the fingertips until the mixture resembles fine breadcrumbs.

  3. Mix with enough cold water to form a firm dough.

  4. Knead gently on a lightly floured surface. Roll out and use to line a 20 cm/8 in pie plate.

  5. Trim the edge and decorate with the prongs of a fork.

  6. Squeeze your Hartley’s Smooth Squeezy Jam in the centre of the pastry.

  7. Bake in a preheated oven at 200c/400f/gas mark 6 for about 20 minutes until the pastry is golden and the jam is bubbling.

  8. Serve warm or cold.
