STEP 1:

apple
coconut
coconut milk
milk
pineapple

Pour reduced fat coconut milk, pineapple chunks with juice, and ice into a blender.

STEP 2:

Blend on low for 20 seconds and then high for another 20 seconds

STEP 3:

Pour into glasses and serve immediately.

STEP 4:

Enjoy!

These healthy pina colada mocktails are my favorite drink to have on a hot summer day or any day when I want to just sit back, relax, and not worry about anything. I’ve always been a huge fan of pina colada’s with pineapple and coconut being some of my favorite flavors and the combination just being even better. The problem with pina coladas is that the cream of coconut has such a high fat content. With such a high fat content it’s hard to sit back, relax, and drink a ton because it’s so caloric. 

When I was younger and away on vacation with my family I used to drink five or six pina colada’s easily in a day, but as I’ve gotten older, that’s not really in the cards anymore. But I still want to enjoy pina coladas, so I set out on a mission to make a healthy pina colada mocktail that was both lower calorie and delicious because why shouldn’t we be able to get the best of both worlds?

This healthy pina colada mocktail is the perfect combination of coconut and pineapple without being to heavy or sweet. This is a refreshing drink that doesn’t leave that dense feeling in your stomach you get after enjoying a traditional pina colada. Once I made this healthy pina colada mocktail for the first time I knew it was going to be a staple for me all summer long.

 I’ve tried a ton of different combinations of adding extra pineapple, adding less coconut milk, and trying light coconut milk versus regular and I have concurred that this recipe is the best when it comes to taste and health.

This recipe is obviously a healthy pina colada MOCKTAIL, but if you are above the age of 21, you could add rum. If I were to be making this healthy pina colada mocktail with rum, I would do a combination of light and dark rum because that seems to be the best flavor but if you’re in a pinch and you don’t have rum on hand, you could make this with vodka but know that the vodka is much stronger in flavor than the rum and lacks the syrupy taste that rum has so you’ll need to add a bit extra pineapple juice for more sweetness and to mask more of the vodka flavor.

I’ve made these a few times now this summer for my family and my friends, and nobody would know that it’s a healthier version of the tropical drink. The hardest part about making this drink while admitting the cream of coconut is getting that right consistency, because the cream of coconut has a very unique thicker texture. I have found that the best way to replicate that is by doing crushed ice and pineapple in addition to pineapple juice.
