A quick, easy, healthy and cheap alternative to pancakes / Serves: 1


  • 1 banana
  • 2 eggs
  • 1 tsp baking powder


Blend all the ingredients together. (Or mash the banana before whisking in the egg and baking powder)

Meanwhile, heat a non-stick pan over a high heat (or add a generous amount of non-stick spray)

Add dollops of the banana mix, leave for 2 minutes before flipping and cooking for a further two minutes.

Put in a pot or on a plate, drizzle with the sauce of your choice/ yoghurt, fresh berries, the possibilities are endless.
