Step 1:

  • 1) chuck all the vegetables and the mince in together with the oil and fry for 10 minutes. Season the meat with pepper and thyme.
  • Step 2:

  • 2) add the chopped tomatoes and beef stock, and allow to simmer for 45 mintues on a medium heat or until the vegetables are cooked –
  • Step 3:

  • serve with a bit of bread, rice or steamed green vegetables.
