Ingredients
- a joint of topside beef.
- 1 swede peeled and cut into chunks,
- 2 peppers sliced,
- 5 king edward potatoes peeled and cut into quarters,
- 1 handful of rosemary leaves chopped very finely
- 1 handful of thyme leaves chopped very finely
- good glug of olive oil
- 2 small onions
Instructions
cover the beef with some olive oil adn the chopped thyme and place on a bed of roughly chopped onions one a roasting tin and place in oven at 180 degrees. cook the beef for 1 – 2 hours depending on preferences.
put the vegetables into the roasting tin and add some more olive oil and the rosemary put in oven for 1 hour.
