Home Made Jaffa Cake

Yes these r fully made from scratch
Difficulty Level: easy
Ingredients
- 2 eggs
- 25 grams sugar
- 50 grams plain flour
- *1 sachet orange jelly (can be sugar free)
- 75 grams dark chocolate
- *= this can be any flavour jelly to make different flavour jaffa cakes
Instructions
1. Grease 8 muffin tin holes but not too much
2. Put the eggs and sugar into a bowl on top of a pan of simmering water
3. Whisk for 4-5 mins or until pale and a bit fluffy
4. Add the flour beating the mix continuously until a thick batter that is smooth forms
5. Fill the muffin tins half full, bake them for 8-10 mins or until it looks a pale brown/golden colour and they are cooked through
6. When they are cooked leave to cool completely in there tray
7. Now put the jelly sachet in a jug and no matter what the back says just put in 285 ml of boiling water and then stir it until fully dissolved then make it up with 425 ml of cold water
8. Now in a shallow tray less then 1cm thick pour the jelly out (if it is more then 1 cm thick it will be taller then the actual cake itself!!!)
9. When it is set cut out circle rounds a little smaller then the cake and then put on top of cake
10. Now melt the chocolate and put over the cake/jelly like a brought jaffa cake
11. Leave to set and then be done
12. Enjoy!!!!
