Homemade Baked Beans

Ingredients
- 1 onion, chopped
- 3 garlic cloves, crushed
- half a carrot, chopped
- 2 tins cannellini beans/red kidney beans/chickpeas/4 bean mix (they all work well, but i prefer cannellini)
- 1 tin chopped tomatoes
- green split peas (optional)
- 1 vegetable stock cube
- 2 teaspoons whole cummin seeds
- salt and pepper
- fresh basil/mint/parsley/corriander (whatever you have or like)
Instructions
In a large saucepan, cook onion and garlic in some oil. Chuck in the carrot and cook for a couple of minutes. When cooked add the tinned tomatoes, beans and green split peas. Chuck in the vegetable stock cube and some salt and pepper. Let this simmer for a while on a low heat, stirring occasionally, as the split peas take a while to cook. Once this is done, you can mix up the recipe i have written, you can add whatever herbs or spices you like or have. You could add a chili, peas or some corn kernels too. I’m not normally a fan of mixed herbs as it is quite strong, but 2 teaspoons of mixed herbs do go well in this.
this will last 2 or 3 meals for one person. I make this, eat some, then freeze the leftovers. It freezes very well.
