Homemade Banana Fritters

A light dish that can be eaten for desert or even a small daytime snack

Ingredients
- 3 bananas
- 1 1/2 cups of self raising flour
- 1/4 cup of milk
- 3 tablespoons of brown or white sugar
- 1/4 of vanilla extract
- 1 cup of oil
Instructions
1.Place oil in frying pan and turn on a medium heat, make sure oil covers base of the pan
2. Mash up the bananas in a bowl
2. Add the flour and mix until you have a thick consistency
3. Once the mix thickens up then add milk and stir again untill it becomes a light batter
4. Once you have a light batter then add the sugar and the vanilla
5. Take spoon fulls and place in the pan, fry untill the fritter is golden brown underneath then flip it over and wait for the other side to turn golden brown
6. Once the fritter is done, place on plate covered with paper towel to soak up the oil
7. Once the oil is drained off eat and enjoy !!
