The trick to making this chicken potpie recipe is buying pre-made refrigerated pie crust sheets. There, I’ve said it. This makes any potpie a guaranteed win, as you cannot go wrong with store-bought pastry. It also cuts down the cleanup time and prep time massively. We’re talking at least an hour saved, and that’s for someone who knows how to make pastry.

Chicken Potpie Recipe Ingredients

  • 2 tablespoons of canola oil
  • 1 medium onion, chopped
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of poultry seasoning
  • 1 can of chicken broth, 14 1/2 ounces
  • 3/4 cup of 2% milk
  • 3 cups of cooked chicken, cubed
  • 2 cups of frozen mixed vegetables, thawed
  • 1 refrigerated pie crust sheet

Chicken Potpie Recipe Instructions

  1. Preheat the oven to 450°F and grease a 9-inch deep-dish pie plate.
  2. Heat the canola oil in a large saucepan over medium-high heat.
  3. Add the chopped onion and cook until soft. This will take about 4 minutes.
  4. Stir in the flour and poultry seasoning. Cook for about 1 minute, stirring so the flour does not burn.
  5. Slowly whisk in the chicken broth and milk. Keep stirring until the sauce thickens. This will take about 3 minutes.
  6. Stir in the cooked chicken and thawed mixed vegetables (you could also used canned veggies).
  7. Spoon the filling into the prepared pie plate and place the pie crust over the filling.
  8. Trim the edges, press them to seal around the edge of the pie plate. Crimp with a fork or your fingers to shape.
  9. Cut a few small slits in the top of the crust so steam can escape and bake for 20 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Let the potpie rest for 10 minutes before serving.
