Homestyle Chicken and Dumplings

Ingredients
- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup frozen peas
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 cup all-purpose flour
- 1 cup milk
- 2 cups biscuit mix
- 2/3 cup milk (for dumplings)
- Salt to taste
Instructions
- In a large pot, combine the chicken broth, chopped onion, carrots, celery, thyme, pepper, and salt. Bring to a boil.
- Add the chicken breasts to the broth. Reduce heat and let simmer for about 20 minutes, or until chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the frozen peas and let cook for an additional 5 minutes.
- In a separate bowl, mix the biscuit mix with 2/3 cup milk to form a dough.
- Drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for about 15 minutes, or until the dumplings are cooked through.
- In a small bowl, whisk together the flour and 1 cup of milk until smooth. Stir this mixture into the pot to thicken the broth.
