Homestyle Chicken and Dumplings

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups biscuit mix
  • 2/3 cup milk (for dumplings)
  • Salt to taste

Instructions

  1. In a large pot, combine the chicken broth, chopped onion, carrots, celery, thyme, pepper, and salt. Bring to a boil.
  2. Add the chicken breasts to the broth. Reduce heat and let simmer for about 20 minutes, or until chicken is cooked through.
  3. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  4. Stir in the frozen peas and let cook for an additional 5 minutes.
  5. In a separate bowl, mix the biscuit mix with 2/3 cup milk to form a dough.
  6. Drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for about 15 minutes, or until the dumplings are cooked through.
  7. In a small bowl, whisk together the flour and 1 cup of milk until smooth. Stir this mixture into the pot to thicken the broth.
